Cranberry Walnut Pumpkin Bread

For Christmas I received the book Baking With Julia by Dorie Greenspan from my soon to be cousin-in-law (is that what you call it?.)  My fiance came across a recipe for Cranberry Walnut Pumpkin bread which perfectly defines both of our tastes.  He had been craving cranberry walnut bread and I’m just in love with anything that calls for pumpkin.  So he marked it for me to make in the future.

I love breads, and most of them I see that call for pumpkin are more of a cake than a bread, but this one is not.  This is a yeast risen bread, made the day before and then put in the fridge to retard, which makes it more airy with a crust.  The recipe makes three small loaves which is perfect because you can just pop one in the freezer for later enjoyment!  The bread was so aromatic when it was baking that my entire apartment smelled like pumpkin spices.  My New Years guests raved about how delicious it was and even my fiance who’s not a fan of pumpkin thought it was wonderful.
